Has a good sale or harvest left you with more food than you can use right away? There's no need to let it go to waste. Here are instructions for freezing some foods you may have never thought of freezing:

Mix the yolks and egg whites together, and pour them into an ice cube tray. Two cubes are the equivalent of one large egg. When you're ready to use them, just toss your egg cubes into a pan with the other ingredients that your recipe calls for, and allow them to thaw as they cook.

Store milk in its original container, but pour out enough milk to allow for expansion – approximately a cup per gallon of milk will do the trick. Thaw frozen milk in the refrigerator, and shake it well before using.
Freeze butter in the box it came in to prevent freezer burn. Thaw the whole box or individual sticks in the refrigerator overnight. If you need butter right away, you can thaw it in the microwave by heating it in 10-second intervals, until it softens. Just be careful not to heat it for too long -- butter melts quickly.

Peel your bananas; place them in a freezer bag; and pop them in the freezer. You can thaw the bananas to use them in breads and baked goods, or use them frozen in smoothies to lend thickness to your drink. Frozen bananas aren't really suited to eating fresh.

Wash and chop your celery to your preferred size. Then, flash freeze it on a tray, and transfer to a freezer bag or another air-tight container. To use: add the frozen celery directly to soups or other heated dishes. Frozen celery loses its crispness, so it's really only suited to use in cooked foods.

Wash your tomatoes thoroughly, and pat them dry. Then, freeze whole and unpeeled on a tray. Transfer to freezer bags once fully frozen. Add them to soups frozen (they'll thaw as they cook), or use them to make sauce once you have a bunch.

Chop your herbs finely. Then, place them in an ice cube tray along with a small amount of water. To use: simply drop frozen cubes directly into heated dishes.

Freeze nuts (either in the shell or out of the shell). Just place them in a freezer bag or another air-tight container and store them until you need them.

Wash and chop your squash to your desired size. Then, blanch the pieces for three minutes; allow them to cool, and freeze in an air-tight container.

Freeze apples whole or chopped, peeled or unpeeled. Whatever works best for you.
